Who knew my morning would lead to a Potato Frittata?

I woke up this morning feeling different. Why is it that some mornings, I don’t feel like getting out of bed (except to wobble into the kitchen for some pancakes), but this morning, I woke up and thought, “I want to go for a run”?

This is not normal for me, and I don’t think it’s that I slept any better. In fact, my husband told me, to my alarm, that I actually fell out of bed last night. Wait, what? I don’t remember that! But apparently, he woke up to a scream only to find me on the floor next to the bed. Maybe he was dreaming… only in his dreams would he get the whole bed to himself! But if his conjecture is true, a peaceful night’s sleep I did not have.

And I didn’t eat anything special yesterday that would give me extra energy — except for three mini-sized candy bars, a toffee caramel, a Tootsie roll, and Jolly Rancher that I stole out of the candy bowl in my office… A lot of mindless eating went on yesterday.

So obviously, it’s not that I have been eating well, but maybe it’s because I have been overeating that my body actually decided to self-enroll in exercise boot camp. I’m glad I listened to my body, and I didn’t decide instead to just lumber into the kitchen for cup of coffee and a slice of French toast (which is the other thing I was leaning towards doing first thing this morning).

When I got back from a good 30 minutes of traipsing around my neighborhood, I felt renewed and full of energy, just like all the flowers after last night’s rainstorm. I didn’t want to eat anything too heavy that would weigh me down, so I nibbled on a peach with some granola as I got ready for work.

Then, my husband surprised me by saying he was hungry for breakfast. Since he never really eats much in the morning (strange, but true!), this was a special occasion! I found some leftovers in the fridge, and decided to make an impromptu Potato Frittata with fresh parsley and arugula from our very happy garden. Instead of toast on the slide, I folded some cheese into a tortilla to serve along with the very colorful fritatta.

I’m not sure if I could have been so creative on the spot if I hadn’t felt so refreshed this morning! My husband enjoyed his half for breakfast, and I brought mine to work for lunch to save me from the candy bowl!

Oh, it would be great if I had mindful mornings like this everyday.

Quick Potato Frittata

1 teaspoon olive oil
1/2 small red onion, chopped
3/4 cup roasted potatoes, diced (I had red potatoes and sweet potatoes)
4 large eggs
chopped fresh parsley
fresh arugula
salt and fresh ground pepper, to taste

Heat olive oil over medium heat in large skillet. Add onions, saute for 1 minute, then add potatoes. Heat another minute or two. (Now go out to the garden to get your greens if you’ve got them!)

Meanwhile, beat eggs in a bowl. Add parsley, salt, and pepper. Pour eggs over onion and potatoes in skillet. Reduce heat to low and cover. Cook until top of eggs are set, 5-8 minutes. Garnish with fresh arugula.
